Einstein Bros Bagels in Union projected to open Oct. 17

You’ll soon be able to grab a bagel and a cup of brew at the new Einstein Bros Bagels in the Union.
The eatery is scheduled to open Friday, Oct. 17, over Fall Break. Kim DiNardo, marketing manager with the U’s Dining Services, said it’s an Einstein Bros tradition to open on a Friday, but construction delays could push the date back further into the month.
Amanda Price, a junior in film and media arts, commutes to the U from Layton. She eats on campus once or twice a week but tends to pack a lunch from home. She said Einstein Bros will be an “improvement” to the food options currently on campus.
John DeMonja wishes Dining Services would put in a grocery shop with healthier choices instead of places like Einstein Bros.
“A lot of the stuff is kind of just junk food,” he said. “It might be a little more beneficial if they put a market or something in with real food. I would go and buy milk and bread and stuff.”
Shen Jing, a graduate student in finance, wishes the Union would put in a restaurant with authentic Asian cuisine. Her friend Bai Zhidong, a Ph.D. student in electrical engineering, said Panda Express is “too sweet.” Both Shen and Bai are from China and miss the food.
John Schwarz, a graduate student in electronic arts and engineering, shrugged when he saw the advertisements for Einstein Bros.
“I’ve come to expect a very low quality of food from the university, and something like Einsteins is just par for the course,” Schwarz said. “Ultimately I wish everything was a lot better, but I guess everybody wishes that.”
But Sam Mold, a freshman in pre-psychology, lives on campus and is still excited for the Einstein Bros shop.
“I have the meal plan, so I’ll eat down in the Union building,” she said.
Mold said she “wouldn’t have wanted anything else” to fill the space.
The bagel shop will accept cash and meal plan dining dollars.
